3/4 lb. lean smoked sausage, sliced in 1/4-inch pieces and browned
3 15 oz. cans black beans, drained
1 1/2 C chopped onions
1 1/2 C chopped green bell peppers
1 1/2 C chopped celery
4 garlic cloves, minced
2 tsp. dried thyme
1 1/2 tsp. dried oregano
1 1/2 tsp. black pepper
1 chicken bouillon cube
3 bay leaves
8 oz. can tomato sauce
1 C water
1. Combine all ingredients in slow cooker.
2. Cover. Cook on low 8 hours or on high 4 hours.
3. Remove bay leaves before serving.
Notes:
- for a different consistency, you can substitute a 14 1/2 oz. can of low-sodium stewed tomatoes for the tomato sauce.
